Lemon Blueberry Cheesecake

Blueberry Compote Topping

Ingredients:
2 cups frozen blueberries
3 tbsp water
1/4 cup sugar
2 tspn lemon juice

Add 1 cup of blueberries, water, sugar and lemon juice to a small saucepan. Cook over a medium heat for ~10 minutes. Add the rest of your blueberries and cook for another 8 minutes, stirring regularly. Top individual pieces of Laura's Lemon Blueberry Cheesecake with ~1 tbsp of the compote and enjoy!
